Spring Break!

March 31, 2007

Spring break is here for Metro Atlanta schools. I was going to drive to NYC and surprise my mom, but the 15 hour drive in my not-so-desirable “put put” car deterred me to chill out here and clean/organize house. I am so, so excited…to do nothing! Wooohooo! http://melecotte.blogspot.com/feeds/posts/default?alt=rss

My Lunchbox…

March 30, 2007

Ora del pranzo/Lunch hour I laughed aloud when I say Daily Tiffin’s event, What’s in your lunchbox. This is not because the event itself has any comedic draw, but because this is another reason for friend’s to giggle at my anal retentive/OCD tendencies. Specifically, M will make some comment, or blog about this, since he […]

Tilapia with Sun Dried Tomato Pesto (X 2)

March 29, 2007

I had my menu all planned out for the week, veggies chopped, proteins ready, oven prepped. It was a cook-fest about to jump off….right until my dentist appointment. After having my zillionth (word?) appointment, a regular occurrence over the last 5 months, today was gum surgery # 3…which ultimately led to another round of stitches. […]

Orange Truffles

March 28, 2007

When I brought the Peter Cottontail cake into the office, I also included a box of the haystacks and these orange truffles. These truffles were so, so easy to make, which I just love! Yet, the verdict for these were still out for me … until these little guys received rave reviews by the front […]

White Chocolate & Sweet Potato Cake

March 28, 2007

I saw this posting Allison made a couple of weeks ago and thought, “Wow! Now, this is a dessert!” I had to try it. Then, when I was at the store and saw/bought itty bitty cake tins – four inchers, I thought – perfect! I adore sweet potatoes! But, in most recipes that include sweet […]

WHB – Angel Hair Pasta Italian Medley

March 27, 2007

I am trying to expand my leafy repertoire, since I feel I am growing a slight resemblance to Popeye. I have seen such lovely recipes that include arugula, yet haven’t had much exposure to it personally. Therefore, I wanted to see what all the hype was about. What have I found out? No cholesterol, low […]

Waiter, there’s something in my … Easter basket!

March 26, 2007

Caramella alla frutta/Jelly beans! I was a busy bunny this weekend, making Peter Cotton Tail cake for the front office staff (to be posted later this week). I also decided to complete a dry run on some kid friendly recipes, allowing me to troubleshoot before the food ends up in tummies Easter weekend. The end […]

March 26, 2007

I found pictures in a random stack that brought me back to when I did a lot of catering. After I received my Baking & Pastry Certification, I had a lot of requests for desserts. Looking back, I can’t believe some of these are mine! I haven’t decorated like this in a while. Who knows […]

Turkey Tortilla Flats

March 25, 2007

Tacchino/Turkey I bought this month’s edition of Everyday Food, which, as I flipped through the pages in the grocery store, is full off Chris-Friendly recipes. I noticed that, between my freezer and pantry, I (thought) I already had many of the ingredients. This…my friends….is key. I am not a big fan of Lamb, but liked […]
