It’s Friday, y’all! Phew!  I feel like I have been chasing the proverbial carrot all week and finally became a contender after waking up this morning.  The weekend is an arm’s length away. 

Have you had the same long week I have had?  During moments like these, diving into a vat of comfort food feels about right.   This week, that comfort food was soup.  Specifically?  Bisque.  I couldn’t crawl in my bed, hibernate, and practice in an activity of avoidance  like I wanted, a rich, thick, creamy soup stepped in as a great substitute. A bowl of crab bisque would not have been bad.  But, I wasn’t feeling seafood. An evenly pureed tomato mix, blended with the buttery goodness of the cream hit the spot…for sure.

Tomato Bisque

2 Tbsp. butter
2 onions, chopped
1 clove garlic, minced
15 oz canned whole tomatoes
4 ripe vine tomatoes, peeled and finely chopped
salt and pepper to taste
2 cups vegetable broth
2 Tbsp. fresh basil, chopped
1 ½ cups heavy cream

Melt butter in large sauce pan. Sauté onion and garlic, over medium heat, until softened. Add all tomatoes, broth, and seasonings. Bring to a boil, then reduce heat to a simmer, cover and cook 35-40 minutes. Remove from heat and purée. Reheat on low, add cream and season to taste.

Yes! That’s exactly what I need after my week, too. I’ll have a large bowl full with some buttery crouton and a glass of ice cold chardonnay, please.

Sounds yummy. I had a moment at the end of last winter when I wanted tomato soup and I’ll admit…I went to the cupboard for the canned variety. Hmm, none in the house so I made my own; very much like yours but without the fresh tomatoes. I’ll never buy canned tomato soup again. The difference is huge, the effort is easy and the results are…well, my recall combined with your picture and the drool factor is high!

I will admit that I have never made homemade tomato soup or bisque. I must try your recipe. It sound delicious. I love tomato soup!

I’ll have a bowl of that, please. I love tomato soup! Maybe float a crouton with some melted goat cheese in it….

Hmmm – there is nothing like a comforting bowl tomato soup after a stressful week. Pass on the grilled cheese because this one looks perfect.
