Getting back into a regular routine has been a little more challenging than I thought!  The new job is good, but I have found myself struggling to stay awake when I get home.  So, dinner has consisted of anything quick and (preferably) healthy.  Successfully adjusting to regular routine means making the most out of time and task, right? How about a dinner dessert combo?

What fruit plays nice with friends? Figs!  Beautiful, fresh figs.


I was going to use mascarpone with this lil’ tasty treat, but I realized I finished my last bit this weekend.  No worries!  Goat cheese works!

Broiled Figs with Goat Cheese and Spiced Honey

Wash, and pat dry 4 ripe, blemish-free figs. Using a sharp knife, quarter each fig. Place on a lined cookie sheet covered with oiled paper. Add about ½ Tbsp. of goat cheese in the center of each fig and place them under a broiler for 5-6 minutes, until the goat cheese browns.

Meanwhile, mix together ¼ tsp ground cinnamon, 1/8 teaspoon each of ground cardamom & ground allspice.  Add to honey and heat until warm and liquefied. Drizzle honey over each fig and serve immediately.

Looks so good! Figs were just on sale this past week at our co-op, and now I’m sorry I missed picking some up. Dishes like this (along with lamb burgers with fig/feta) are some of my favorite dishes when the fruits are in season.
