Pretty funny thing happened at work. My boss called me into his office and said, ‘I wanted to offer you my congratulations!” Huh? My mind whirling. Did the [insert company names here] call regarding my inquiries? Could it be? A new position without me having to interview? Were the days of my feeling physically ill Monday through Friday from 7-7 over?

“Your twin won National AP of the Year!” He then handed me the magazine. On the front cover was a lady with long, curly red hair…like me! Weird! She and I really did look like one another…Here she is in a video, but her hair doesn’t look as red as it did on the cover.

I laughed and expressed my intrigue with the similarities, and (silently) wished I still had her passion Then, I joked that I thought [insert company name here] called him for a reference. Whoops! Did I say that out loud? Doh! “Look at the time…time to do work on exams!” And… out I went. Good thing I signed my contract….

But, enough of that awkwardness…Fast forward to home when I wanted to bake something for our Connections teachers (PE, Art, etc) because of all the work they’ve done for field day (amidst everything else they do). But, I needed a quick bake because I was tired, had a zillion things to do, and didn’t want to fall asleep mid-bake. (Yeah, I fell asleep last night…all lights on, TV on, laptop on my lap, mid-twitter comment to Glamah. Nice! And, what’s more…when I got to work this morning, the cupcakes and cookies I made for the retirement party were a week early. I had the day of the week correct, but the not correct week itself. Yup! Can you say “calendar update needed”?)

I recalled February’s baking when I tried another Bakerella creation. The Red Velvet Sandwich Cookies were a huge hit at my Foster Parent classes. So, I went that direction again, only with different flavors. The result? Strawberry & Cream Sandwich Cookies and Choco-Cream Sandwich Cookies. Sweet, but yummy.

Strawberry & Cream Sandwich Cookies

An adapted recipe (flavor only) seen on Bakerella who tweaked it from allhomemadecookies.com

1 box strawberry cake mix
½ cup butter, softened to room temperature
2 Eggs
½ tub white icing (I used Pillsbury Fluffy White)

Preheat oven to 350 degrees. Mix ingredients until combined. Drop spoonfuls of cookie batter onto baking sheet about two inches apart. Bake for 10-12 minutes. Cool completely. Pair the cookies up. Place a dollop of preferred icing in the center of one cookie and sandwich with its mate. Makes about 24 cookies or 12 cookie sandwiches.

Choco-Cream Sandwich Cookies

½ cup butter, softened to room temperature
2 Eggs
