Leftovers: Polenta Cheese Bites

I was so tired when I got home from work Friday and didn’t feel like cooking a big dinner. I mentioned the other day that I was trying to use up the random foods in the fridge, and Friday wasn’t any different. So, quick 15-20 minutes of prep and cooking – and its eatin’ time!

After baking slices of pre-cooked polenta in a 400 degree F oven for10-15 minutes (until the top begins to dry a bit), top with leftovers. On the various slices, I used fresh mozzarella, roasted peppers, roasted onions, and a goat cheese/ tapenade mix. (While preparing the polenta rounds, switch the oven from bake to broil.)

Broil for 5 minutes, or until the cheese begins to soften/melt. Yum!
