I think I have mentioned in previous posts that, when I bake, I bring the final goodies to work. I don’t eat many of the sweets I make, mostly because I can’t eat chocolate or brown sugar. Nonetheless, one of the administrators in the school where I am housed has dropped several hints that his favorite cookie is Oatmeal Raisin. Well, he was out for several days with a nasty virus, so I decided to whip up a batch for him when he returned.
Silly me – no pictures. I don’t really know why I didn’t! I think because I was watching mind-numbing reality TV while cooking these. But, here’s the soft cookie recipe -
Oatmeal Raisin Cookies
- ¾ cup butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp vanilla
- 1 ½ cups all purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp cloves
- ½ tsp allspice
- 3 cups oatmeal (old fashioned or quick, uncooked)
- 2 cup raisins
Preheat oven to 350°F. Beat together butter and sugars until creamy. Add eggs and vanilla, and beat well after each egg addition. Add flour, baking soda, and spices, mixing well. Stir in oatmeal and raisins until well incorporated. Drop dough, 1 rounded tablespoon per cookie, onto ungreased cookie sheet. Bake 10-12 minutes or until golden brown. Cool 1-2 minutes on cookie sheet. Remove and place on wire rack. (My scooper scoops a golf ball size ball of dough, so I usually have to bake the cookies for 15-17 minutes.)
